Klára Kollárová (45) is a leading Czech sommelier who turned her passion for wine and winemaking into her lifelong work. She studied Humanities and Cultural Studies at the Faculty of Arts, Charles University. During her university studies, she started to educate herself in the field of wine and continues to do so. She holds the title of Fine and Rare Wine Specialist and completed the WSET Diploma in Wine and Spirits. Currently, she is the National Sommelier at the National Wine Centre in Valtice. Until 2022, she was the head sommelier and co-owner of the wine bars Vinograf. She has worked in the Michelin-starred restaurant La Degustation Bohême Bourgeoise and has been curating and recommending primarily Moravian wines for Albert’s private label "Sommelier Collection" since 2021.
Tomáš Kapek, the grandson of a publican, tapped his first keg at seven years old. A hotel school education was an obvious choice. He gained experience mainly in 5-star hotels in the Czech Republic and abroad. As a student, he practiced in the Inter-Continental Hotel in breakfast service, later in "room service" at the Marriott Hotel. His true five-star experience came as a chef de rang and private dining supervisor at The Kildare Hotel and Country Club in Ireland. Returning to the Czech Republic, he held management positions, first at Hilton Prague and later as Food & Beverage Director at Novotel Prague and Le Palais Hotel. Since January 2018, he has been the Catering Director at Cubex Prague.
Barbora Kuziová started working at V Zátiší Restaurant in 2018 as a waitress during her studies at the Hotel College. She developed a passion for gastronomy during her travels with her family, experiencing diverse cuisines worldwide. She particularly loves Italian cuisine, fine Barolo, and authentic pizza or pasta. The V Zátiší team taught her the importance of doing everything to the best of her ability or not doing it at all. Guests become friends, and the restaurant feels like home. Barbora emphasizes creating unforgettable experiences for guests and building a motivated and passionate team.
Jan Srb is a native of Ústí nad Labem but has spent most of his life in Prague. For the last 10 years, he has been working and living in Krásná Lípa in northern Bohemia. After studying Social Geography and Regional Development at UJEP and the Faculty of Science at Charles University, he spent nearly 15 years consulting in regional and economic development, tourism, and EU regional policy. In 2010, he founded Falkenštejn Brewery in Krásná Lípa. Since 2015, he has focused full-time on managing the brewery. In 2019, he completed a retraining course in malting and brewing at VÚPS.
Ing. Pavla Hodinková is a renowned headhunter, HR specialist, and founder of the successful Dream Job Agency, focusing on top and mid-management roles in hospitalityjobs and gastrojobs. With extensive experience since 2011, she has built a unique client portfolio and a strong candidate database. With a meticulous approach, she helps candidates find their Dream Job and clients assemble the perfect Dream Team. Throughout her career, Pavla has actively contributed to the professional community as a member of the Chamber of Commerce, Skal Club, and AHR. Her involvement goes beyond her work at Dream Job; she shares her expertise in lectures at VŠE, VŠO, and various conferences and panel discussions. She has assisted with team assembly and other HR matters at renowned companies such as Orea, Andaz, PPF, Hilton, Zuri Zanzibar, and more.
After graduating from the legendary Hotel School in Velké Meziříčí, Přemysl Neuman began his career at InterContinental Prague, eventually becoming the Restaurant Manager of Zlatá Praha Restaurant. He helped expand Pravda Group projects in Prague and contributed to opening five operations. Later, as Food & Beverage Manager at Hotel Paris Prague, he gained extensive experience. In 2010, he transitioned to sales, working as a Key Account Manager for Julius Meinl Coffee Intl., overseeing numerous global projects. For the past five years, he has been the HoReCa Director at Leros Group, part of the Kofola Group.
Radka Pokorná has been involved in sustainability since 2006, spending the last 10 years at Kokoza. Her primary expertise is urban cultivation. The socially beneficial company KOKOZA, o.p.s., helps individuals, companies, restaurants, and other organizations sort bio-waste, compost, and grow herbs, fruits, and vegetables in urban areas. Their goal is to tailor solutions to best meet the needs of a given operation and effectively educate individuals and teams. This approach enables successful projects that bring joy not only to the environment but also to the operations themselves.
Martin Kocourek is an experienced expert in hotel management, with over 25 years in the field. He currently works as an Assistant Professor at University College Prague – Faculty of Hotel and Economic Studies, teaching subjects such as Accommodation Management, Strategic Management, Modern HR, and Revenue Management. He gained his extensive experience in leading positions at renowned hotel chains such as Marriott Hotels, Asten Hotels, and Orea Hotels. Alongside his academic career, he provides consultancy services for hotel companies, focusing on strategic management and revenue optimization. His ambition is to integrate new technologies and innovations with traditional hospitality practices and contribute to the modernization of the industry.
Aneta is a nutritionist with extensive experience in both public and private healthcare sectors. She earned her degree at the 1st Faculty of Medicine, Charles University. In addition to working in clinics and medical faculties, she provides comprehensive nutritional counseling in her private practice. She also collaborates with the Paraple Center, where she regularly leads nutrition workshops and consults with clients recovering from spinal cord injuries. Aneta has co-authored several professional publications on clinical nutrition and actively writes articles and organizes workshops for the general public. She lectures at medical conferences, seminars, and panel discussions. She is Vice Chair of the Section of Nutritionists, the largest professional organization of nutritionists in the Czech Republic. Her mission is to combat extreme dietary trends and unsustainable fad diets, guiding her clients to understand basic principles and develop their unique and sustainable dietary regimen.
Mirek, originally from Hodonín, graduated from the Faculty of Law at Masaryk University in Brno. He has never regretted his decision to join the Vizovice distillery as a trained lawyer, saying, “You can only regret what you haven’t done!” He joined RUDOLF JELÍNEK a.s. in 2008 as an assistant to the CEO and later led the sales team as On-trade Manager. Since 2012, he has served as Commercial and Marketing Director and became a board member in 2021. Mirek is responsible for sales and marketing in the Czech Republic, advocating quality over quantity. He is dedicated to producing only high-quality, premium spirits. Today, RUDOLF JELÍNEK is one of the world’s largest producers of fruit spirits.
Over his 30-year career, Pavel has held various sales positions, primarily in major FMCG multinational companies. More than 13 years ago, he joined the family-owned company Mattoni 1873 (a leader in the non-alcoholic beverage market in Central Europe). He initially worked in the retail division as National Sales Manager before taking over as Sales Director of the HORECA division 8 years ago. He oversees gastronomy businesses, vending machines, office and wholesale suppliers, as well as a service department managing tens of thousands of cooling and dispensing devices in the Czech Republic. Pavel values teamwork and building customer relationships, saying, “Success can only be achieved with the best and most motivated team.” He has previously shared his sales experience with students at VŠE in Prague and Silesian University in Karviná. His ambition is to improve the quality and service of Czech gastronomy, with Mattoni 1873 products and services playing a significant role.
